'On The Road' Birthday Cake

This project turned out really well considering last year's attempt at a galaxy cake...

Expectation vs. Reality

This year was slightly different, in that rather than being at home with a kitchen full of equipment for baking/cooking, we were spending the weekend away at the beach for some beach birthday celebrations. Just being the two of us, there weren’t any great expectations for a cake to feed the masses, but I at least wanted to attempt to outdo the disastrous cake of the previous year.

Now the place hat we were staying at the beach was great – a small kiwi batch, but with very limited kitchen facilities. I mean, a kettle, microwave, fridge and some cutlery and plates.

I had played with the idea of doing something with pancakes instead of a baking a birthday cake, but given we weren’t working with much in the way of kitchen supplies I had to get a little creative. I wandered around the local supermarket for inspiration, and ended up buying a bunch of ingredients with a vague idea of what I wanted to do with them.These ingredients turned into a pretty cool pseudo-birthday-cake, very easy to put together and even easier to make!

What you’ll need:

  • Piklets/pancakes (pre-made or homemade), whatever size you want!

  • Nutella

  • A banana

  • Some kind of sprinkles

  • Candles

  • Something to light the candles with (essential if travelling!)

  • Something to display ‘cake’ on- I used a chopping board

How to make an 'On The Road' Birthday Cake

Starting with one of your pancakes, generously lather with Nutella and place a few pieces of thinly sliced banana on top, spread evenly.

Place another pancake of top of this and repeat until you have reached the approximate height of the cake that works for you – I did 5 of these layers plus the top layer, so 6 pancakes in total.

On a separate plate, take a pancake and again, lather in Nutella. On top of this, pour your sprinkles and gently pat down so that they stick.

Give this pancake a gentle shake to get rid of any loose sprinkles, and place on the existing pancake stack. Pop a few candles in the top, and you’ve successfully made a cake!!

This was most definitely a successful cake for on the road, and a big step up from last year for me. We ate the cake layer by layer rather that trying to cut through all the layers, and was just as tasty the next day warmed up in the microwave.
